 Alltech, an eco-friendly agricultural company founded by Pearse Lyons and currently led by Mark Lyons, provides its own developed yeast strains and non-GMO corn. Unlike the bourbon industry, which typically uses continuous stills as its primary distillation, Town Branch uses only pot stills imported from Scotland for both primary and secondary distillation. Most of the manufacturing process, from bottle washing to labeling, is done by hand. Labels in different positions for each bottle became the style of the town branch. At some point, in the bourbon industry, ‘small batch’ became synonymous with being ordinary. We even blend more than 30 barrels of spirit. Town Branch Small Batch only uses a maximum of 8 barrels. The new oak barrels are used to mature the bourbon whiskey and then the bourbon aged beer. It is then aged into single malt whiskey and finally sent to Dublin to be aged into Irish whiskey.
